makes about 3 1/2 dozen
- 2/3 c butter (1 stick plus 3 Tbs)
- 1/2 c raw honey
- 1/3 c pure maple syrup
- 1 egg
- 2 tsp pure vanilla extract (such as Simply Organic Vanilla Extract)
- 1 c whole wheat flour
- 3/4 c unbleached all purpose flour
- 1/2 c high quality natural cocoa powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 c raw cranberries, roughly chopped
- 1 c raw walnuts, chopped
Preheat oven to 400F.
In a large bowl, beat the butter until fluffy (about 20-30 seconds). Add honey, maple syrup, egg, and vanilla. Beat until combined.
Stir in the wheat flour, unbleached all purpose flour, cocoa, baking soda, and salt until combined.
Fold in the cranberries and walnuts.
Drop by rounded teaspoons 2" apart on ungreased cookie sheets.
Bake 8-10 minutes or until done. Cool completely on wire racks.
