Peasant Pea Soup



serves 8


  • 1 lb dry split peas, sorted and rinsed
  • 1 cup diced carrots (about 3 medium)
  • 1 cup diced celery, including any leaves (about 4 stalks)
  • 1 cup diced onion (1 medium)
  • 3 cloves garlic, minced
  • 2 medium potatoes, diced
  • 1 Tbs fresh parsley, minced, optional
  • 2 bay leaves
  • 1 1/2 tsp sea salt
  • 3/4 tsp dried oregano
  • 1/2 tsp freshly ground black pepper
  • 8 cups water
Combine everything in a stockpot.  Bring to a boil, cover, reduce heat to low/simmer.  Simmer for about 1 1/2 hours, or until the peas have broken down, stirring occasionally.  Give it a taste, adjust salt and pepper, and serve.
